Made with only ginger, brewing vinegar, and sugar. As it is handmade, custom orders to change the seasoning are possible. Custom orders can choose from domestically produced ginger or Thai ginger.
Domestically Produced Polished Fresh Ginger Gari
Domestically produced fresh ginger is trimmed by hand, gently scraped with a bamboo spatula to remove the skin, and boiled after being sliced to remove any bitter taste.
Samples Available
We can provide samples that include our additive-free homemade gari, domestically produced polished fresh ginger gari, and gari made with Thai ginger to restaurants that are interested in ordering our products. Carefully Selected Domestically Produced Wasabi
Connoisseurship Cultivated Over Many Years
Carefully Selected Production Regions and Producers
We rely on connoisseurship that has been cultivated over many years to purchase the finest seasonal wasabi from several famous production regions all over Japan including Shizuoka (such as Izu, Gotenba, and upstream of the Abe River), Nagano, and Iwate. We deliver these products to sushi restaurants and restaurants specializing in Japanese cuisine located both in Japan and overseas. Flavor is everything when it comes to wasabi. Each wasabi has its own characteristics, with differences in producers being even greater than differences in regions. We maintain open lines of communication with our producers in order to carefully select only the freshest wasabi. Please feel free to contact us if you are interested in using our products.
Sushi Garnishes and More
We offer various garnishes for sushi including sasa (bamboo grass), hikage-no-katsura (club moss), and haran (for partitioning).
Pickles for Sushi and Washoku
We primarily offer pickles such as Senbon-zuke , Nara-zuke, Bettara with skin, and mountain burdock marinated in miso.
